The Pioneer Woman is one of my favorite television food personalities. I own at least three of her cookbooks! This recipe for lasagna is my absolute favorite! It is extremely tasty thanks to the three types of meats and blend of cheese. Try it for yourself and tell me what you think.

2 tbsp. olive oil
1 large onion, diced
3 cloves garlic, minced
2 lbs. ground beef
1 lb. country breakfast sausage
12 oz. pepperoni
One 28 oz. whole tomatoes
one 12 oz. tomato paste
1/4 c. pesto, jarred or fresh
1/3 c. finely minces parsley
1/2 tsp. red pepper flakes
1 tsp. black pepper
30 oz whole mild ricotta cheese
2 eggs
1 c. shredded Parmasean cheese
24 oz. fresh mozzarella cheese
12 lasagna noodles cook al dente
1/2 c. grated parmesan cheese
Drizzle the pan with olive oil over medium heat .
Add the onion, garlic, ground beef and country sausage.
Breakup and cook meat until it is brown.
Cut the log of pepperoni in quarters chunks.
Add the pepperoni to the pot of the browned beef.
Cook mixture of about three minutes.
Drain off excess grease.
Add the whole tomatoes and the tomato paste.
Add the pesto and half the parsley.
One teaspoon of salt, the pepper flakes, and 1/2 tsp. black pepper.
Stir all ingredients, reduce heat to low, and simmer for 25 to 30 minutes.
Now, make the cheese mixture: combine the ricotta and eggs in a large bowl.
Add the shredded parmesan and rest of the parsley, salt and pepper.
Stir the mixture until it is all combined.
Finally, cut the mozzarella into slices.
Preheat oven for 350F.
To assemble the lasagna, overlap 4 lasagna noodles in the bottom of a large rectangular baking dish.
Spoon two thirds of the meat sauce over the noodles and smooth out.
Lay four more noodles
Spoon in the ricotta mixture and smooth out.
Make a layer of fresh mozzarella cheese
Add another layer of four noodles
Add the rest of the meat sauce
Top with grated parmesan cheese.
Cover the lasagna with aluminum foil and bake it for 30 minutes, then remove foil and bake for 15 minutes until the cheese is hot and bubbly.
Remove the lasagna from the oven and let it sit for 10 to 15 minutes, then cut it into squares.
